And when Roma pizzeria opens its doors February 2021 in Easton, Maryland, the newest spot by Bluepoint Hospitality, is making it possible to behave like Romans with authentic style pie from the Italian motherland.

The “best” pizza in Italy is a matter of fierce opinions and long-standing rivalries. Neapolitan is a beloved pie in America, but Roman versions are taking a serious place amongst pizza connoisseurs. In Naples, the pizza boasts a soft, thin and slightly chewy dough, but in Rome, pizza cooks have an allegiance to a distinctly crisp crust.

Within Rome, the Italian staple can be consumed in many different shapes and forms: al taglio, by the slice, it’s the city’s most popular street food; tonda, round pie, and pinsa, the oval-shaped pizza pie. But the gastronomic masterpiece of a traditional Roman -style pizza, inspired by the old farming tradition, is square. In customary fashion, scissors do the cutting, and they measure their success by the ounce rather than the slice.

The Soho-chic interior is grounded by a custom-designed pizza oven and kitchen in plain view. The tempting assortment of daily choices are lined-up in glassed cases at the front counter, displayed like precious jewels. The setting is cozy and casual, offering only counter service pick-ups or for those on-the-go!

The fragrant and airy crust with endless crunch is the result of fastidious work by Chef Glenn May and Todd Lindeburg. From picking stone-milled flours for a proprietary blend, a long and slow leavening of dough, a perfect level of hydration, and an extended fermentation. It’s a 72-hour long process that allows the dough to be so light, sparing you from feeling heavy after you eat it. The exact mix of dough is remaining a secret, so need to ask for the coveted recipe!

From the crust on up, the ingredients are rich and authentic. The pizzas come with generous helpings of lip-smacking tomato sauce that you’ll mop up with leftover crust. It begins with prized cans of Bianco DiNapoli Tomatoes organically grown and harvested, hand-selected, steam-peeled, and redolent of long summer days, and of course – tender-loving care. Fresh plum tomatoes are puréed through the mill with a touch of apple cider vinegar, salt, olive oil, and fresh spices.

With such strong bases, the rest is simple – and simply the best. Italy’s finest regional delicacies, from aged Parmigiano Reggiano, to oregano and anchovies from Sicily, to Sweet Italian Sausage from Rome, enhance the light and cracking-crisp crust and savory sauce. Additional tasteful toppings on selected pizzas will draw your eye to the pie! Prosciutto di Parma, Roasted Cherry Tomatoes, Fresh Arugula, Stracciatella, Mozzarella; Sweet Italian Sausage with broccoli rabe, roasted garlic, and mozzarella; and Roasted Winter Squash with Black Truffle, Fresh Chives, Mozzarella, Parmigiano Reggiano– tough choices with delicious consequences. The light and air-filled, crackingly crisp on the outside with tasteful toppings always completes the packaged goods.

Crafted with real artisanal pride to Bluepoint Hospitality’s exacting standards, Roma pizza-pies will make Easton “shine like it’s had too much wine” – in a very good way – that’s amore!

A Big Pizza Pie Hits Easton with a February 2021 Opening Day When in Rome, do as the Romans!
